SAUSAGE SPANISH RICE 
1 (12 oz.) pkg. sausage links
2 tbsp. sausage drippings
1/4 c. chopped celery
1/4 c. chopped green pepper
1/4 c. chopped onion
1 (16 oz.) can tomatoes
1 (8 oz.) can tomato sauce
1 c. uncooked rice

Cut sausage in bite size pieces. Pan fry and remove to paper towel. Saute onion, pepper, and celery in drippings. Drain tomatoes and chop, saving juice. Combine juice and tomato sauce, adding enough water to make 3 1/2 cups liquid. Combine all ingredients and stir to prevent rice from sticking. Bring to a boil turn down to a simmer and cook for 20 to 25 minutes or until rice is thoroughly cooked. Stir frequently. Serves 6 to 8.
