CHICKEN & RICE (SPANISH) 
1 lb. boneless chicken breast, cut into strips
1 1/2 tsp. oil
1 1/2 c. water
1 (8 oz.) can tomato sauce
1 pkg. taco seasoning mix
1 c. corn, drained
1 med. red pepper
1 1/2 c. Minute Rice (or long grain rice)
1/4 c. shredded Cheddar cheese

Cook and stir chicken in hot oil. Lightly brown. Add water and tomato sauce. Cook and simmer 5 minutes. Add corn and pepper and taco seasoning. Stir in rice. Let stand 5 minutes. Fluff with fork. Add cheese. Serves 4 to 6. Serve with a salad.
