ZUCCHINI BOATS 
4 sm. zucchini
2 c. crumbled herb seasoned stuffing mix
1 tbsp. butter
1/4 tsp. salt
1 egg
2 tbsp. grated Parmesan cheese

Cut zucchini in half lengthwise. Scoop out center. Use pulp (centers) and add stuffing mix, butter and salt. Cook covered for 6 minutes. Stir in egg. Spoon into zucchini shells. Place on serving platters. Sprinkle with cheese. Cover; cook for 8 minutes or until tender.
