TAMALE PIE | |
1 c. chopped onion 1/2 c. chopped green peppers 1 lb. ground beef 2 (8 oz.) cans seasoned tomato sauce 12 oz. can (1 1/2 c.) whole kernel corn, drained 1 c. chopped ripe olives (optional) 1 tbsp. sugar 1 tsp. salt 2-3 tsp. chili powder Dash pepper 1 c. shredded sharp processed American cheese (optional) Cook onion and green peppers in a little hot fat until tender. Add meat and brown lightly. Add all ingredients except cheese. Simmer 20 minutes or until thick. Add cheese, stir until melted. Pour into greased baking dish. CORNMEAL TOPPER: 3/4 c. yellow cornmeal 1/2 tsp. salt 2 c. cold water 1 tbsp. butter Stir cornmeal and salt into cold water. Cook and stir until thick. Add butter, mix well. Spoon over hot meat mixture. Bake about 40 minutes in 375 degree oven. 6 generous servings. |
