LEMON PUDDING 
1 c. sugar
1 tbsp. butter
2 tbsp. flour (heaping)
Juice and rind of 1 lemon
1 c. milk
2 eggs

Cream butter. Add sugar. Add flour and lemon. Add beaten egg yolks, milk, and lastly beaten egg whites. Bake in pudding dish setting in a pan of water. Bake 25-30 minutes in moderate oven.
