RICE PUDDING WITH LEMON SAUCE 
3 c. cooked rice
1/2 tsp. salt
1 tsp. vanilla extract
1 tbsp. butter
3 c. milk
1/3 c. sugar

Combine rice, milk, salt and sugar in a 2 quart saucepan. Simmer about 30 minutes or until thick, stirring occasionally. Remove from heat and stir in vanilla and butter. Serve.
