CRUSTY WHITE BREAD 
4-4 1/2 c. unbleached flour
2 pkg. active dry yeast
2 c. warm water
1/4 c. cooking oil
2 tbsp. sugar
1-2 tsp. salt (to taste)

In large mixing bowl combine 2 cups flour and all other ingredients. Stir together. Beat on high speed with electric mixer for 3 1/2 minutes. By hand, stir in enough remaining flour to make a moderately stiff dough. Knead on floured surface for 10 minutes adding small amount of flour to make it manageable. Sometimes it is necessary to use more than the 4 1/2 cups.

Shape into a ball and place in greased bowl. Cover and allow to rise until double in size, approximately 1 1/2 hours. Punch down and divide in half. Allow dough to rest for 10 minutes then shape into 2 loaves. Place in greased bread pans and allow to rise again to double size, approximately 1 hour.
