CRABMEAT AU GRATIN 
1 lb. crabmeat
3 tbsp. butter
1/4 c. finely chopped celery
1/2 c. finely chopped green onion
1 heaping tbsp. flour
1 1/2 c. milk
1 egg yolk, well beaten
1/2 tsp. prepared mustard
3/4 c. grated Cheddar cheese
Pinch of nutmeg
Pinch of cayenne pepper
3 tbsp. bread crumbs
1/4 c. grated Cheddar cheese
2 tbsp. lemon juice
Dash of paprika

Saute onion and celery in butter until transparent. Stir in flour and blend well. Add milk, stirring constantly until smooth. Add nutmeg, pepper, mustard and cheese and remove from fire.

Beat egg yolk and add lemon juice and crabmeat and mix well. Add to other ingredients. Place in shallow, buttered baking dish.

Combine 1/4 cup of cheese and bread crumbs. Sprinkle over top and add dash of paprika. Bake at 350 degrees for 15-20 minutes until top is brown and crusty.
