CRABMEAT AU GRATIN | |
Preheat oven to 375 degrees. 1 stalk celery, chopped 1 c. chopped onion 1 stick butter 2 egg yolks 1/2 c. flour (all-purpose) 1/4 tsp. black pepper 1/2 tsp. red pepper 1 tsp. salt 1 (13 oz.) can evaporated milk 1 lb. crabmeat (may use salad crabmeat) 1/2 lb. grated cheese Saute onions and celery in butter. Blend in flour. Gradually add milk, stirring constantly. Add egg yolks and pepper. Cook 5 minutes. Put crabmeat in a bowl and pour sauce over. Place in lightly greased 11 x 17 inch Pyrex dish. Sprinkle with cheese. Bake for 10-15 minutes. You can only buy 12 ounce cans of milk. May use a little plain milk. |
