BAKED POTATO WEDGES 
6 med. potatoes
Water
Dash salt
3 tbsp. oil
1/2 tsp. salt
Dash black pepper
1/2 tsp. dried oregano leaves
Dash cayenne pepper
1/3 c. grated Parmesan cheese
2 tbsp. fancy shredded cheddar cheese

Scrub unpeeled potatoes well. Cut each potato in half lengthwise. Then cut into even wedges. Boil potatoes for 5 minutes in salted water. Drain. Pat dry. Spread potato wedges in a single layer on a lightly greased baking sheet. Sprinkle with oil, spices and herbs. Bake at 425 degrees for about 15 minutes, sprinkle with cheeses. Bake at 425 degrees for another 10 to 10 minutes or until potatoes are golden brown and cheese is melted

I love the technique of boiling the potatoes first; reduces the bake time! I made as directed, except I forgot the cheddar cheese-only used the Parmesan and they were still delicious. Bet they will be incredible with both cheeses. Will be making again very soon. Thanks for the recipe!
