PINEAPPLE CHEESE NUT LOAF 
1 (13 1/4 oz.) can crushed pineapple
1 c. ready-to-eat bran cereal
2 1/4 c. flour
1/3 c. sugar
3 tsp. baking powder
1 tsp. baking soda
1 c. grated cheese (Cheddar)
2 eggs, beaten
3 tbsp. soft or melted shortening
1/2 c. nuts, chopped

Combine undrained pineapple and cereal; let stand while measuring remaining ingredients. Mix flour, sugar, baking powder, salt and soda; add cheese and mix lightly. Combine eggs and shortening with pineapple mixture. Add nuts. Mix only until flour is moistened.

Spoon into a well-greased 9 x 5 x 2-inch loaf pan. Bake on the lowest rack in a 325 degree oven for 1 hour and 10 minutes, until loaf tests done. Let stand for 10 minutes; then invert onto a wire rack to cool. Makes 1 loaf.
