BOTERKOEK (DUTCH BUTTER CAKE) 
1 lb. (4 sticks) butter
2 cups white sugar
2 eggs plus 1 egg white
1 to 2 tsp. almond flavoring
3 3/4 cups all-purpose flour

Mix in order given. Press into a 9x13-inch pan or 2 round cake pans. You can make a design by pressing down on top with a fork. Brush top with beaten egg white.

Bake at 400°F for 30 minutes, or until golden in color.
