OATMEAL MUFFINS 
1 c. oats
1 c. buttermilk or sour milk
1/3 c. soft shortening (part butter)
1/2 c. brown sugar, packed
1 egg
1 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt

Soak oatmeal in buttermilk for 1 hour. Heat oven to 400 degrees. Mix shortening, sugar and egg thoroughly. Sift dry ingredients together and stir into shortening mixture alternately with oatmeal and buttermilk. Fill greased muffin cups 2/3 full. Bake 20 to 25 minutes. Makes 12.
