BANANA GINGER BREAD 
3 medium, extra rip bananas
1/2 c. brown sugar, packed
1/4 c. butter, softened
3 tbsp. light molasses
1 egg
1 tsp. vanilla
2 1/4 c. flour
1 tsp. baking powder
1 tsp. ground ginger
1/2 tsp. baking soda
1/2 tsp. salt
1 c. raisin

Slice bananas into blender. Whirl until pureed (about 1 1/4 cups). Cream sugar, butter, and molasses until well blended. Beat in egg and vanilla. Beat in bananas.

Combine dry ingredients. Gradually beat into banana mixture, mixing well. Stir in raisins. Pour into greased 9 x 5 inch loaf pan. Bake in 350 degree oven 50-60 minutes. Cool in pan 10 minutes. Turn onto wire rack to complete cooling.
