MOIST PINEAPPLE COOKIES 
1 c. soft shortening (butter and butter)
1 1/2 c. sugar
1 egg
1 (9 oz.) can crushed pineapple with juice (1 c.)
3 1/2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 c. chopped nuts

Mix shortening, sugar and egg. Stir in pineapple with juice. Sift together flour, soda, salt and nutmeg. Add to creamed shortening mixture, mix well. Add 1/2 cup chopped nuts. Chill 1 hour. Drop by teaspoonful 2 inches apart. Bake 400 degrees, 8-10 minutes.
