FRUIT COOKIES 
1 3/4 c. unsweetened pineapple/orange juice concentrate
1/2 c. raisins
1/2 c. dried & chopped figs
1/2 c. unsweetened banana chips, crushed
4 egg whites or 2 extra lg. eggs
1/3 c. vegetable oil
1/2 tsp. cinnamon
3 c. all-purpose flour
2 tsp. baking soda

Preheat oven to 350 degrees. Oil 2 large cookie sheets. In bowl combine the concentrate, raisins, figs, banana chips, eggs and oil.

In another bowl combine the cinnamon, flour and soda. Add to the fruit mixture and mix well; stirring quickly. Quickly drop batter by tablespoons onto the cookie sheets. Bake 8-9 minutes; rotating half way through baking. Remove cookies from cookie sheets. Put on wax paper and cool completely.
