MOM'S PINEAPPLE COOKIES 
1/2 c. shortening
1 egg
1/2 c. brown sugar
3/4 c. drained, crushed pineapple
2 c. flour
1/4 tsp. baking soda
1/4 tsp. baking powder
1 tsp. vanilla
1/2 c. chopped nuts

ICING:

1/4 c. butter
1 egg
4 tbsp. pineapple juice
Powdered sugar

(This makes enough icing for a double recipe of cookies.)

Cream together the shortening, egg and brown sugar. Add the well drained pineapple, flour, soda and baking powder. Mix thoroughly, then add the nuts and vanilla. Drop on a baking sheet and bake 12 minutes at 400 degrees. Mix the butter, egg, pineapple juice and enough powdered sugar to make the icing easy to spread.
