MOM'S HONEY COOKIES 
1/3 c. shortening
1/3 c. sugar
1 egg
2/3 c. honey
1 tsp. lemon flavoring
2 3/4 c. sifted flour
1 tsp. baking soda
1 tsp. salt

Mix shortening, sugar, egg, honey and lemon flavoring thoroughly. Sift flour, soda and salt together and stir in. Chill dough. Roll out 1/4 inch thick. Cut into desired shapes. Place 1 inch apart on lightly greased baking sheet. Bake until, when touched lightly with finger, no imprint remains. When cool, ice and decorate as desired. Bake for 8 to 10 minutes at 375 degrees. Yields: about 5 dozen 2 1/2 inch cookies.

EASY CREAMY ICING:

1 c. sifted confectioners' sugar
1/4 tsp. salt
1/2 tsp. flavoring (vanilla, lemon or almond)

Blend sifted confectioners' sugar, salt, flavoring and enough liquid to make it easy to spread (about 1 tablespoon water or 1 1/2 tablespoons cream). Tint, if desired. Spread on cookies with brush or spatula.
