ROTKOHL OR BRAISED RED CABBAGE | |
1 head red cabbage, sliced thin 2 tart apples, peeled, chopped 1 onion, peeled, sliced 3 tbsp. cider vinegar 1/2 c. dry red wine 1 tsp. salt 2 tbsp. sugar 4 tbsp. shortening 1/2 c. water 2 bay leaves 6 cloves Put all ingredients into large Dutch oven. Simmer covered for 1 hour. Simmer uncovered until l liquid is mostly gone, about 45 more minutes. Freezes well. |
