SAVORY CABBAGE SOUP 
2 tbsp. butter
1 med. onion, chopped
1 lb. cabbage, coarsely chopped
5 c. chicken stock
1 1/2 tsp. mixed herbs
1/2 tsp. dried dill weed
1 c. diced ham
1 bunch scallions, chopped
1 lb. potatoes, peeled & coarsely chopped
Salt & Pepper to taste
1 c. grated Swiss cheese
1/2-1 tsp. cayenne pepper

Melt butter in large pan; saute ham, onion, scallions and cabbage until onion is transparent (7 minutes). Add potatoes, stir. Pour in stock and add salt and pepper. Bring to boil, turn down heat and simmer for 45 to 50 minutes, over medium heat. Add cheese, a little at a time, stirring until melted. do not boil. Immediately before serving, add remaining ingredients.
