SAVOURY CABBAGE | |
2 1/4 lb. cabbage 3 1/2 oz. fat bacon or lard 2 apples 1/2 pt. water 1 tsp. caraway seeds About 2 tbsp. vinegar Sugar Salt 1 tsp. cornstarch powder 1 tbsp. cold water Remove the outer leaves, cut the cabbage into 8 sections, remove the hard core and wash. Shred or cut into strips. Fry the diced bacon or melt the lard, add the cabbage and cook for a short time. Add the peeled and finely sliced apples, the water and the caraway seeds. Simmer until done. Season to taste with vinegar, sugar and salt. Thicken the cooking liquid with the cornstarch, blended with the water. Cooking time: About 60 minutes. |
