RED KIDNEY BEAN BURGERS 
16 oz. cooked red kidney beans
1/2 cup small onion
1/2 green pepper
2 cloves garlic, minced
1 large carrot, steamed and mashed
1/4 cup picanté salsa sauce
1 cup bread crumbs
1/2 cup white or whole wheat flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon chili powder

Combine all ingredients. Form into equal sized balls and flatten to shape into patties.

Bake at 450°F for 15 to 20 minutes.

Serve on buns with tortilla chips.

Variation: Press flattened patties into buttered bread crumbs before baking.

This turned out well; no worries about undercooking. I buttered and toasted the buns, topped with lettuce, tomato and cheese. Very nice. I did increase the picante salsa to 1/4 cup.
