RED KIDNEY BEANS 
1 lb. red kidney beans
1/2 lb. ham or other meat
8 to 10 c. water
1 onion, chopped
1 clove garlic
1/2 stalk celery, chopped
2 tbsp. parsley
2 bay leaves
meat drippings
salt to taste

Cook beans in a large pot, covered; cook on low. Add ham or other seasoning meat to beans. In meat drippings, saut onions, garlic, celery, parsley and bay leaves; add to beans and cook for 1 1/2 to 1 3/4 hours. Add water if necessary while cooking. Cook until done. Serve over rice and serve.
