VEAL OR CHICKEN MARSALA 
4 pieces meat (scalloped)
White flour
5 tbsp. butter
1 tbsp. olive oil
Mushrooms
1/2 c. Marsala cooking wine
1 (10 oz.) can chicken broth

Dust meat with flour and sprinkle with pepper. Saute quickly in butter and oil. Add wine and mushrooms and chicken broth. Cover and simmer gently for 10 minutes. Remove meat to platter and cook down sauce until it thickens. Pour over meat.
