AMISH SALAD 
1 qt. sauerkraut
1 green pepper
1 sm. onion
1 c. celery
1 sm. jar pimentos
1 1/2 c.. sugar
1/2 c. salad oil
2/3 c. vinegar
1/3 c. water

Rinse and drain sauerkraut. Chop green pepper, onion and celery. Mix sugar, oil, vinegar and water; stir to dissolve sugar. Add chopped vegetables, sauerkraut and pimentos. Marinate overnight. Drain before serving. Keeps indefinitely.
