APRICOT BARS 
1/2 c. butter
1 c. unsifted flour
1 tsp. baking powder
1 egg
1 tbsp. milk
1 c. apricot jam
1 c. sugar
1 egg
4 tbsp. butter, melted
2 c. coconut

In mixing bowl, combine butter, flour and baking powder. Blend until crumbly. Beat egg with milk and stir into dough. Stir until mixture holds together. Spread dough into greased 7"x11" pan. Bake at 350 degrees for 15 minutes. Spread jam over pastry layer. Combine sugar, egg and melted butter. Stir in coconut. Spread over jam layer. Bake at 350 degrees for 25 to 30 minutes until golden brown and just set. Cool. Cut into bars when cool. Makes 24 bars.
