APRICOT BARS | |
3/4 c. butter 1 c. sugar 1 egg 2 c. all purpose flour 1/4 tsp. baking powder 1 1/3 c. shredded coconut 1/2 c. chopped walnuts 1/2 tsp. vanilla extract 1 (12 oz.) jar apricot preserves In large mixing bowl, cream butter and sugar. Add egg and mix well. In separate bowl, combine flour and baking powder. Gradually add to butter mixture. Add coconut, walnuts and vanilla and mix thoroughly. Press two-thirds of dough into a greased 13 x 9 x 2 inch baking pan. Spread with preserves and crumble remaining dough over preserves. Bake at 350 degrees for 30 to 35 minutes until golden brown. Makes 36 bars. |
