BAKED BEANS, SOUTHERN STYLE 
1 lb. dried Navy beans
6 c. water
2 garlic cloves, minced
1 onion, sliced
1 sm. dried red hot pepper
1 bay leaf
3/4 lb. salt pork, sliced
3 tbsp. molasses
1/4 c. catsup
1 tsp. dry mustard
1/4 tsp. salt
1/2 tsp. ground ginger
1 1/2 tsp. Worcestershire
1/4 c. firmly packed brown sugar

Cover beans with water, bring to a boil and boil for 2 minutes. Cover and let stand for 1 hour. Add garlic, onion, pepper, bay leaf and pork and cook until beans are tender. Drain, reserving liquid. Put beans in shallow 2 quart baking dish, arranging pork slices on top. To 2 cups liquid (or water) add molasses and remaining ingredients, except sugar. Pour over beans; sprinkle with sugar. Bake, uncovered in preheated hot oven, 400 degrees about 1 hour. Makes 6 servings.
