JERRY GARNER'S BAKED SQUASH 
5 lbs. medium size yellow squash
2 eggs, beaten or Egg Beaters
1 c. whole wheat bread crumbs
4 oz. butter
1/4 c. sugar
2 tbsp. onion, chopped
Dash of pepper

Cut squash into 3 or 4 pieces. Drop squash into boiling water, enough to cover. Return to boil and cook until tender. Drain in colander; mash. Combine with beaten eggs, bread crumbs, butter, sugar, onion, and pepper. Put into 3 quart casserole sprayed with vegetable spray. Cover with light layer of bread crumbs. Bake at 350 degrees until lightly browned, about 20 minutes.
