PEANUT BUTTER SQUARES
1 c. (2 sticks) butter
1 c. graham cracker crumbs
1 (1 lb.) jar natural peanut butter
1 (1 lb.) box confectioners' sugar
1 (12 oz.) pkg. semi-sweet chocolate chips

Melt butter. Add graham cracker crumbs, then stir in peanut butter until smooth. Add enough confectioners' sugar to make the mixture very stiff (you may not need the entire box, however if the mixture is still not stiff after using the whole box, add some more graham cracker crumbs).

Line a 9x13-inch baking pan with foil, waxed paper or plastic wrap so that the candy may be lifted out. Press peanut butter mixture into the pan evenly.

Melt chocolate chips (in saucepan or microwave) and spread evenly over the peanut butter mixture. Cool in refrigerator just until chocolate hardens - about 15 to 30 minutes. Lift out of pan onto cutting board and cut into 1-inch squares. Refrigerate squares until firm.

Since microwave ovens vary in power, you may need to adjust your cooking time.
