MRS. KING'S PIZZA
2 pkgs. yeast
1 tsp. salt
3 c. flour
2/3 c. plus 4 tbsp. warm water
Olive oil
15-23 oz. tomato sauce
4-6 tsp. oregano
1 tsp. basil
2-4 tbsp. sugar
Cornmeal or sesame seeds
2-3 tsp. garlic powder
1/2 tsp. pepper
Salt
1/2 c. Parmesan cheese
1 - 1 1/2 lbs. sweet Italian sausage, cooked and drained
1 med. onion, chopped
2 lbs. Mozzarella, shredded or sliced
Mushrooms, olives, green pepper, pepperoni, or any other toppings

In small bowl, mix warm water and yeast. In large bowl, mix yeast mixture, flour, 1 teaspoon salt and 1/2 cup olive oil. Mix until it forms a ball. Place on well floured surface and knead like crazy for 5 minutes, no longer.

Place in a lightly oiled bowl and let rise in a warm place covered with damp towel, until doubled (about 1 hour). Punch down dough and let it "rest" a few minutes. This dough makes enough for 2 thick or 3 thin crust pizzas.

To make sauce, pour tomato sauce (15 ounce for 2 pizzas, 23 ounce for 3) into saucepan. While simmering over low heat, add spices to taste (oregano, basil, salt, pepper, garlic, etc.), onion, sugar and Parmesan. Cook over low heat while dough rises.

To assemble pizza, coat pizza pans with olive oil. Sprinkle pans with either cornmeal or sesame seeds. Divide dough and spread in pans. Layer dough evenly with cheese, then tidbits (mushrooms, green pepper, etc.) then meat. Last, pour sauce over top, using a spatula to mash it together. Note: It will not look like there's very much pizza sauce.

Preheat oven to 450 degrees. Place one oven rack on bottom of oven. Place pizzas on this rack and the next higher one. Bake 15 minutes and switch places of pizza on racks. Serves 6 to 8 generously.
