TUNA PIE | |
DOUGH: 1/4 c. shortening 1 c. all-purpose flour 1/2 tbsp. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 3/8 c. milk (3 oz. or 6 tbsp.) TUNA MIXTURE: 1 sm. c an tuna 1 egg (opt.) 1 med. onion, chopped 1 tsp. - 1 tbsp. dry sage Frozen green peas (opt.) DOUGH (Crust) : Cut shortening into dry ingredients with a fork or pastry blender. Blend until the mixture resembles fine crumbs. Stir in milk until dough leaves side of bowl (dough will be soft and sticky). Grease a small cookie sheet and spread dough out on cookie sheet. TUNA MIXTURE; Place mixture in the middle of the dough. Use a metal spatula to loosen the edges of the dough from the pan and carefully fold them up over the tuna mixture. Bake for at least 20 minutes or until dough starts to turn golden. TUNA PIE CHEESE SAUCE: 1 tbsp. flour 1 tbsp. butter (oil will not work) 1/4 tsp. salt 1/8 tsp. pepper 7/8 c. milk (7 oz. or 14 tbsp.) 4 oz. sharp cheese, crumbled Melt butter in a saucepan. Take off the heat and mix in flour, pepper and salt. Return to heat and cook, stirring often, until flour starts to turn golden brown. Take off the heat and slowly add milk, stirring to keep mixture smooth. Return to heat and stir constantly until mixture boils. Boil one minute and then remove from heat. Add cheese and stir until cheese is melted. |
