PICKLED BEETS 
12 med. to lg. beets
1 1/2 c. sugar
2 c. cider vinegar
1 1/2 c. water
2 tsp. cloves
4 tbsp. allspice
2 pt. sized canning jars

Wash beets. Place beets in large saucepan and cover with water. Bring to boil. Boil for 30 minutes or until tender. Cool. Peel and slice. Combine sugar, vinegar and spice in saucepan and bring to boil. Add beets and bring to boil again. Simmer 5 minutes. Put in jars and seal.
