BUTTERMILK PANCAKES 
2 c. sifted all purpose flour
1/2 tsp. salt
1 egg, slightly beaten
2 tbsp. melted butter
1 tsp. baking powder
1/2 tsp. baking soda
1 1/2 c. buttermilk

Sift flour, baking powder, salt and soda together into bowl. Combine eggs and buttermilk and add to flour mixture, mixing only until smooth. Blend in butter. Bake on a hot, lightly greased griddle, using 1/4 cup of batter for each pancake. Turn only once. Yield: 4 servings.
