BUTTERMILK PANCAKES 
2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
2 tbsp. sugar
3 eggs, slightly beaten
2 c. buttermilk
2 tbsp. butter, melted

Sift dry ingredients into large bowl. Add eggs, buttermilk, and melted butter, stirring until flour is barely moistened. Cook on lightly greased skillet heat to 375 degrees. Makes about 20 pancakes. Really worth the effort. Batter freezes well.
