CUCUMBER APPLE RINGS 
7 lbs. peeled, sliced & cored cucumbers

Soak 24 hours in 1 gallon water and 1 cup of lime. Wash and soak 3 hours in ice water.

1 c. vinegar
2 oz. bottle red food coloring
1 tbsp. alum

Mix with enough water to cover cucumbers. Simmer for 2 hours. Pour off liquid. Mix and heat:

2 c. vinegar
2 c. water
10 c. sugar
8 cinnamon sticks
1 (4 oz.) pkg. red hots

Pour over cucumbers; let stand 24 hours. Pack in jars and heat syrup to boiling. Pour over cucumbers in jars and seal.
