OVEN FRIED CHICKEN WITH NEW POTATOES & CARROTS | |
1/4 c. dry bread crumbs 1/4 c. yellow corn meal 1 1/2 tsp. curry powder 1/4 tsp. salt 1/8 tsp. pepper 3-3 1/2 lb. chicken, cut up 1/2 c. butter 8 med. size carrots 8 sm. new whole potatoes Chopped parsley In small bag, combine first 5 ingredients. Shake chicken in mixture, a few pieces at a time and set aside. Melt butter in large roasting pan while heating oven to 400 degrees. When butter is melted, remove pan from oven. Tilt pan slightly so butter collects in one corner. Roll carrots and potatoes in butter to coat evenly. Coat chicken with butter, laying pieces side by side with veggies. Bake in 400 degree oven for 35 minutes. Remove, turn chicken and veggies. Return to oven. Cook for 15 minutes or until veggies are tender and chicken no longer pink. Arrange on platter and garnish with parsley. |
