CHEF SCOTT'S BLACK BEAN DIP 
Works great for dip or burrito.

1/2 Spanish onion, chopped
1/2 green and red bell pepper, chopped
chopped garlic, to taste
1 (15 oz.) can black beans, drained
1 (15 oz.) can whole kernel corn, drained
1 (15 oz.) can diced tomatoes
red pepper flakes, to taste
brown sugar, to taste
oil, for frying
butter, for flavor

In heavy large pan heat oil and butter. Cook onions, peppers and garlic till soft. Add beans, corn, tomatoes and red pepper flakes. Cook for 15 to 20 minutes.

Add sugar to taste then finish with a tablespoon of butter.
