KENTUCKY JAM CAKE
1 c. soft butter
2 c. brown sugar
6 eggs
1 c. blackberry jam (seedless)
3 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cloves
1/2 tsp. allspice
1 c. buttermilk
1 c. chopped raisins or dates
1 c. chopped nuts or cherries

Cream butter and sugar until light. Add eggs, one at a time, beating well after each. Add jam and beat well. Add sifted dry ingredients alternately with buttermilk. Beat until smooth. Stir in nuts and raisins.

Bake in 350 degree oven for 35 minutes or until toothpick inserted in center comes out clean. Makes one large or 2 small cakes. Frost with favorite frosting. I generally pour batter into three 8 inch cake pans, it does make a nice large cake.
