SHRIMP AND RICE STUFFED PEPPERS | |
4 bell peppers 1 c. cooked rice 1/2 clove garlic (chopped) 3 bay leaves 1 lb. shrimp 1 med. onion (chopped) 1/4 c. parsley (chopped) 1 can tomato sauce (optional) 1 egg 1/2 c. bread crumbs Cut off tops of bell peppers and clean. Saute in oil or butter the garlic, shrimp and onion. (If the tomato sauce is being used, add to above mixture after the rest is cooked.) Simmer for 10 minutes. Mix all ingredients (except peppers) in bowl. Spoon into peppers. Place peppers in baking dish with 1 inch water in bottom. Bake in 350 degree oven for 25-30 minutes. |
