IRISH POTATO CASSEROLE 
6 lg. red Irish potatoes, boil in jacket until tender and chill
1 stick butter, melted
2 c. grated cheese mild cheddar
1 1/2 to 2 c. sour cream
2/3 c. chopped onions, scallions
Salt, pepper to taste

Peal potatoes and grate on large side of grater. Mix all ingredients and pour into buttered casserole. Refrigerate for several hours or overnight. Bake at 350 degrees for 45 minutes or until bubbly hot. Serve hot and can be reheated. Can be frozen.
