MINT 'N PEAS 
This treatment will make frozen peas taste almost like fresh-from-the-garden.

6 servings.

1 c. water
2 tbsp. sugar
3 to 4 sprigs fresh mint or 1 tsp. dried
1/2 tsp. salt
Few drops fresh lemon juice
2 boxes frozen sweet peas (about 20 oz. total)
1 tbsp. or less butter

Bring water, sugar, mint, salt and lemon juice to boil. Add peas, breaking up frozen clumps with fork. When boil resumes, cover and simmer gently 3 to 4 minutes until just tender. Drain, stir in butter and serve hot.
