MARINATED PORK ROAST 
3-4 lb. pork roast

MARINADE:

1 c. soy sauce
2 tbsp. lemon juice
1 tbsp. finely chopped garlic
1 tbsp. fresh chives or 1 tsp. dried chives
2 tsp. tarragon leaves
2 tsp. basil leaves
1 tsp. ground sage
1 tsp. black pepper

In small bowl combine all marinade ingredients; mix well. Place pork in plastic bag or non-metal bowl. Pour marinade mixture over pork. Seal bag or cover bowl. Marinate 2-3 hours at room temperature or overnight in refrigerator, turning pork several times.

Heat oven to 325 degrees. Remove pork from marinade; reserve marinade. Place pork in shallow roasting pan. Roast for 2-3 hours, basting every 30 minutes with marinade.
