MOLDED SPINACH SALAD | |
2 c. boiling water 2 (3 oz.) pkg. lemon gelatin 1 c. cold water 3 tbsp. vinegar 1 c. mayonnaise Salt and pepper to taste 1 (10 oz.) pkg. chopped frozen spinach, thawed 1 1/2 c. cottage cheese 2/3 c. chopped celery 3 tbsp. chopped green onion Use 2 quart mold or 8x12 inch greased dish. Yield: 12 servings. Dissolve lemon gelatin in boiling water. Add cold water, vinegar, mayonnaise, salt and pepper. Refrigerate until partially set. Gently fold in spinach, cottage cheese, celery and green onion. Pour into an oiled 2-quart mold or 8x12 inch dish. Refrigerate until set. Unmold and cut into squares. Serve on lettuce leaves, if desired. |
