MINUTE RICE SALAD 
1 1/3 c. uncooked rice
1 lg. can pineapple chunks
1/2 c. chopped dill pickles
1 tsp. grated onion
Dash of pepper
2 c. chopped ham
1 c. Swiss cheese
3/4 c. mayonnaise (or more)

Prepare rice according to directions. Cool. Add pickles, onions and pepper to rice. Refrigerate. Add the rest of ingredients just before serving. Serves 4. Serve on lettuce with muffins. Makes a great luncheon.
