BREADED EGGPLANT 
2 lb. eggplant
1 tsp. salt
1/2 tsp. pepper
1 egg, beaten
1 c. cracker crumbs
3 tbsp. butter

Pare eggplant and cut into 1/4-inch slices. Season with salt and pepper. Dip into beaten egg and then into cracker crumbs. Place in greased baking pan; dot with butter and bake at 400 degrees for 40 minutes.
