MINI CHEESECAKES 
12 cupcake liners
12 vanilla wafers
2 (8 oz.) pkg. cream cheese (reg. or low fat) softened to room temp.
1/2 c. sugar
2 eggs
1 tsp. vanilla
Your favorite topping (cherry pie filling, pineapple, chocolate, etc.)

Preheat oven 325 degrees. Beat cream cheese, sugar, eggs and vanilla until smooth. Put cupcake liners in muffin pans. Put a vanilla wafer in the bottom of each liner, fill each about 3/4 full. Bake 25 minutes. Cool before adding toppings. Serve chilled.
