LUSCIOUS VEGETARIAN LASAGNE 
1 box lasagne noodles
4 pkg. frozen chopped spinach
1/2 c. chopped onion
1 tbsp. oil
1 c. grated raw carrots
1/4 grated Parmesan cheese
2 c. fresh sliced mushrooms
15 oz. can tomato sauce
6 oz. can tomato paste
1/2 c. chopped black olives
1 1/2 tsp. oregano
2 lg. container lowfat cottage cheese
3 to 4 lb. Monterey Jack cheese

Can use more if you desire. Cook noodles per package. Cook spinach per package and drain VERY well. Saute onions, add the carrots, mushrooms. Cook until tender. Stir in tomato sauce and paste, olive and oregano. Simmer 20 to 30 minutes.

Grease a 13 x 9 x 2 inch pan. Do one layer of noodles, then cottage cheese, then spinach and a layer of sauce. Then a layer of Monterey Jack cheese. Repeat the process and top with the Parmesan cheese. Bake at 375 degrees for 30 minutes.
