SKILLET LASAGNA 
1 lb. ground beef
1/2 sm. onion, chopped
2 (14 1/2 oz.) cans tomatoes
2 (6 oz.) cans tomato paste
1 pkg. cut lasagna noodles, cooked according to package directions
1/8 tsp. dried garlic or 1-2 fresh garlic cloves
1/2 tsp. basil
1/2 tsp. parsley
1/4 tsp. cayenne
4-6 lg. mushrooms, sliced

TOPPING:

Equal parts each cottage cheese and Mozzarella cheese
Chopped parsley

Brown ground beef and chopped onion. Drain. Add tomatoes, tomato paste, garlic, herbs and mushrooms. Simmer while cooking noodles. Combine cooked noodles and sauce. Cook until bubbly. Combine cottage cheese, grated Mozzarella and parsley. Drop spoonfuls over bubbly lasagna and cover until melted. Prep time: Approximately 30 minutes.
