ZUCCHINI CASSEROLE 
1 lb. ground sausage (or hamburger)
1 c. rice
1 sm. onion
2 sm. zucchini
1 can Hunt's herb sauce
8 oz. grated Mozzarella cheese

Cook rice according to directions on package. Set aside. Brown meat and onion. Remove meat from frying pan and save the grease. Peel and slice 2 small zucchini into thin slices. Fry in meat grease until zucchini is soft and transparent. Combine meat, rice and 1/2 can sauce - put in 9 x 13 inch pan. Add a nice layer of zucchini over that - pour the other part of sauce over that, top with cheese. Bake covered 1 hour at 350 degrees.
